♥Crunchy Peanut Buttons♥ How we ♥ thee!

Am I on a cookie spree? Maybe yes! Been baking a lot lately actually... I am definately not cribbing here now instead feel very proud of myslef ;) I mean who doesn't! Infact my cousin Roshini is coming down all the way from Trivandrum i.e; travelling nearly 600 kms (one way)to spend a week with me! And all what we are going to do is BAKE BAKE BAKE! Phew!

Make cookies out of 'em!
We had been planning this meet since MAY! Ah! Waited too much! Been revising our list of to-do things every week almost! And I guess we have pretty much finalised it! :)

Now onto the recipe, this is a one bowl very simple highly satifying cookies! The crunch in it is just AWESOME And I would dare say 'No one can munch just one'! :)
Crunchy Peanut Buttons
Recipe by my mom

Makes 3 dozen cookies

All purpose flour- 250g
Margarine-250g (make sure it's at room temperature)
Powdered sugar-250g
Peanuts ( without the skin) -250g

Method:
  • Roughly powder the nuts in a mixie.
  • Mix all the ingredients together and form 1/2 lime sized balls.
  • Place them on an ungreased cookie sheet and bake at 180 degrees for 15 mins.
  • They might be soft, but will harden once cooled.
  • Store in airtight tins.
My dad ,bro & myself line up in queue near the oven whenever Amma bakes this cookie! It's one of those mildly sweet, crunchy delicious to the last bite kinda cookie

Warning: Super addictive!
Hope y'all have a beautiful cookie filled day!

i brought in cookies to work today and one of my coworkers asked me why i'd been baking so much lately, especially since it's so hot outside here. i wasn't sure how to answer, except that it makes me happy after a long day at work. and trust me, nobody is complaining about eating the cookies.

Love ur enthusiasm. Wow! someone comes over for a holiday and u spend time together in the kitchen? you 2 are hardcore fanatics pf baking I guess. Cheers to that.
Had a doubt. I don't use margarine. What can I substitute that with. If I use butter, will the texture change?

Thank you my dear lovely people!

Smitha - I haven't tried substituting butter for margarine, but I am sure that it will taste equally good. Maybe you could use unsalted butter :) If you try it, please let me know :)

Hi Ria,

I tried this recipe out yesterday...and something very strange happened .... not sure if its because I used Butter ?
Well what happened was: the first batch that I baked came out with their shapes retained, but the second batch, they all bloated up and becamecame together to make single BIG cookie ... n were done in 2 mins (n I burnt them as I was expecting them to be done so fast :()...is this coz the temp was very high in the oven as I used it immediately after the first batch???? :( .. Do we need to rest the oven b/w batches? BTW I use a microwave and used the convection mode to bake this.
Please help.
P.S:The one's that did turn out unburnt were yummy and were the first edible cookies baked by me.Thanks to you :)!!!

Manju, thanks so much for trying! I don't think it's because you have you used butter here. It's ok to substitute as I do that sometimes now.

Some questions for you :)

1.Did you mix/play with the cookie dough while you were baking the first batch? If so, the warmth from your hands must have warmed the butter in the dough which will lead to the spreading of cookies.

2.Did you put the second batch of cookies onto a hot cookie sheet? If so, they will start to melt by the time you are done with placing all of them onto the baking sheet. Just let the sheet cool completely and then go on adding the cookies to bake.

No, the oven needs to be on in between the batches as it needs to maintain the temp.So don't worry, it will not affect the cookies.I cannot figure out how the second batch got baked in 2 mins :) Did you increase the temperature?

Just try and think if you did anything different between the first and second batch since the first batch came out well :)

Congrats on baking your first edible cookie and I'm so happy that you got the recipe from my blog :)

Keep it up!

Thanks a lot for taking the time out to post a reply!! Means a lot...

Yes I did place them on a hot sheet, the same one where the first one's were baked (sheepish grin)... n I think what might have worsened the problem is that I was using a Borosil baking dish and it was very HOT after the first batch was done!!!Did not change the temperature though (as if what I did already was not enough :D)..So I think i got my answer...
The problem is since I use a microwave I am not sure if I can use a metal baking tray (not sure where to get them either, need to go hunting for them now i guess if I want to make great cookies that look great too :D)
Thanks once again Ria ... Im an enlightened person now :D
Also I have been stalking your blog for quite some time now, trying to decide what to try next .. will surely let you know when I do.
You doing a great Job!!!!

Hi Ria,

I baked a new batch of these this weekend as my 2 year old is asking for biscuits these days and I wanted him to have something home made.
Followed your instructions and they turned out beautiful and tasty...n all of us loved it!!!!!
Since it was for the lil one I replaced plain flour with whole wheat flour and its just as yummy!!!
I am jotting down recipes tried by me on my page, can I put this one there with your permission and with the reference to your blog?
Thanks in advance.
