CHICKEN FRIED RICE ...re-kindling memories

My mom's fried rice is one of the best fried rice anyone could possibly have.It is definatley not just my testimony, but by others who have travelled around the globe and had a chance to taste all those wonderful food . It is actually an adaptation of my grandmother's. If there is anyone who does not agree to the comment I made above, it has to be my dad, because he still says, 'Mamma's is original!' :)

Today, while I was cooking with my cousin, we were talking about different tastes people have. I feel that most  women carry the taste of their own homes to the homes that they are married into, or the one they eventually set up. I am saying this because, I could see myself doing that everyday.

But, my mom, didn't know the ABC of cooking when she got married (well, she knew how to make omlettes and tea). It was my grandmother who taught her a LOT of stuff, so Amma still re-creates that taste at home... Lucky Dad but Poor Jobin! ;)

This fried rice was taught to my grandma by her cook in Malaysia...but eventually it was Indian-ised , a lot!

I remember you sharing the recipe with me through gtalk.I have to try this.Looks so so good Ria.

My cooking is a mix of my amma's and my ma-in-law's.I was clueless about cooking and my amma guided me through it all,by giving simple instructions. But as they say,the way to a man's heart is through his stomach.I learned all his favorite dishes from his mom and now..aaal is well..:):)

    Ria,
Can we use regular long grain rice or should it be only basmathi?and also wasn't sure about the amount of water mentioned in the recipe

    Thank you everybody! :)

Aps- Try and let me know how you liked it :)

Divya- Yes, it is the same recipe!

Miri- Welcome and thank you :) Hope to see you often!!

    Avanika- LOL!

Devi- You can use the rice of your choice. We usually use short grain back home, but in US I could only find long grain...so :)

What I meant was...for 1 cup of rice use 1 1/2 cups of water and cook till the water is completely absorbed and the rice is cooked. Spread the rice out on a plate, kitchen towel etc and let it cool. This is to prevent the stickiness and clumping of final product :)

Hope I am clear...or else let me know!

I've spent a lot of years away from home studying and living in a hostel so you might understand how hungry I must be for good food. There was this tiny Chinese food stall close to my hostel which used to make mighty fried rice and Manchurian. 10rs. a plate and every other day you could find us there.
You just brought back all those memories :-)
I think I'm making some myself very soon.
